I need some advice, bread does way too fast here.

Ive found that some of the recipes need tweaking, but the fathead pizza recipe is perfectly delicious.

(7,539 posts)The recipe takes a little practice, it's like making a crepe, but you can make low-carb tortillas out of coconut flour, egg white, a little baking powder, and seasonings.

I halve the recipe:
2tbsp + 2tsp coconut flour
4 egg whites (equivalent liquid egg white from a carton is easiest)
1/4 tsp baking powder
shake garlic powder/onion powder/chili powder/salt
5 tbsp water
It will be very very runny batter. I use a small nonstick pan on medium heat; you want to spray it between each one and cover the bottom with a very thin layer by tilting it like a crepe. Let it cook longer than you expect - they are fragile while hot and this is not like a pancake you just flip before the top is solid. Like pancakes, it's common that the first one is goofy.
Watch for the top to be dry and the edges to start curling up just a bit. I can't use a spatula because it will snowplow right through - I loosen the edges with a spoon, then carefully peel it up using my fingers and flip it. Then you're fine. Cooking spray between every tortilla for best results and "leopard-spotting". They will become more sturdy but are soft and pliable when they cool.
A serving is about 4 soft-taco size with about 2g net carb.
