quick and easy ground beef enchiladas.

2 lbs hamburger.
1 white onion diced
shredded Sharp Cheddar cheese
2 cans Old Elpaso mild enchilada sauce
Corn Tortillia shells



In large skillit, saute' the diced onion, add crumbled hamburger to brown WITH the onions.
put a large spoonful into corn tortillia shell add cheese roll closed. Place side by side in glass baking dish. Repeat until all mixture is used. Cover the filled tortillia shells with the enchilada sauce making sure to cover every shell. Sprinkle Cheddar cheese all over the top and cover with Aluminum Foil. Bake at 350 for 1 hour.

I wonder how sliced boneless skinless chicken breast would work, add it raw and brown it with the onions instead of the ground beef . I'm thinking budget too in my area blsl chicken breast is cheaper than burger

My chicken enchiladas are much different but I have been hooked on the beef ones. It has been a Sunday staple for the last month

I freeze chicken stock in small amounts, and also freeze small portions of tomato sauce and tomato past from those herkin' big Costco cans. Enough for two meals for two if I freeze half of it.

3 tablespoons vegetable oil
3 tablespoons all-purpose flour
3 tablespoons chili powder
1 teaspoon ground cumin
1 (8-ounce) can tomato sauce
2 cups water
1 cup chicken stock
1 teaspoon salt
1 teaspoon garlic powder (or 1-2 garlic minced garlic cloves)
1 teaspoon onion powder (or a tablespoon of finely minced onion

Heat oil in large 2-quart saucepan; mix dry ingredients well; add them and cook for 1 minute.
Add remaining ingredients bring to a boil and simmer for about 10 minutes.
Makes 3-4 cups sauce.
