Meatloaf made with ground pork. As ingredients, it has Swiss cheese, onion, herbs, cannellinis. A little lime-mayo is the topping.
As a side dish, the following:
--Roasted asparagus topped with slivered almonds
--Brussels sprouts, roasted, with prosciutto
--Cuban black beans with red onion served over avocado puree
--Italian broad beans in olive oil, onion, and garlic
Dessert: 3 dates.
Mango-rita to drink; also cold chamomile tea.

Dessert is sherbet.
I love chicken. I could eat it almost every day since, like Forrest Gump's buddy Bubba said about shrimp, there are a thousand ways to prepare it. Tonight won't be that fancy.

(55,011 posts)my last meal (LOL) before surgery. might have a bite of leftover salad too. was thinking a steak but it is so hot, and it might rain and the son wants to run to town anyway, so pizza it is. will save the ribeyes for when I return, possibly as early as Friday!
