Mama Leone's.

Basically... saute some garlic and fresh rosemary in butter and EVOO. Brown the pork chops in it. Dump in canned whole tomatoes, a lot of parsley and simmer covered until tender. Then cook spaghetti separately. Drain spaghetti and add a chunk of butter and a good cup or more of grated good parmesan. Add in the juice from the chops, and stir til spaghetti is coated with cheese and juices. Plate by putting down the cheesy spaghetti on a platter, chops on top, and pouring the tomatoes and pan juice on top of that. Serve with crusty bread.

A family favorite for many years.

Salmon (lemon, garlic, and black pepper) poached in water
Mixed veggies (stir fries) with a spicy curry sauce.

FLFC had a mix of various leftover meats. He is lobbying for something off our plates, but I know that there is nothing he will eat.

corned beef cooked with onions and garlic in the instant pot, then the beef got a rest while potatoes, carrots, turnip and cabbage were pressure cooked for a few minutes in the beef broth. Was good and didn't heat up the kitchen.

I usually don't bake in the summer except for a 20 minute self rising pizza once in a while.
