Pasta fagioli with grated pecorino romano over it. A little touch of sour cream and avocado mayo in the center.
Plain salad with no dressing; just spring greens.
We are getting thunderstorms and massive amounts of rainfall, so this sounds good to me.
For dessert, I have cut up strawberries and blueberries which I will serve with tea biscuits. I might put a little whipped cream on the berries since the tea biscuits are not sweet and I need something to counter the tartness.

Breaded and baked chicken cutlets with my own special gravy along with mashed potatoes and a green salad.
There was a little birthday party at the office so I brought home a couple of cup cakes for dessert.

(3,414 posts)1 pkg. extra firm tofu, drained and cut into chunks
1 (20 oz) can pineapple chunks, drain juice into a cup
1 red bell pepper, cut into thick strips
1/2 onion, cut into strips
Non-stick cooking spray
Jasmine rice, about 4 or 5 servings
Marinade:
1/4 cup drained pineapple juice
2 Tbsp Japanese style (toasted) sesame oil
1/2 cup Sweet Baby Ray's Sweet teriyaki sauce
3 Tbsp Kikkoman teriyaki sauce
Drain tofu of all liquid. Cut into chunks. Mix marinade in a large bowl and add tofu, pineapple, pepper and onion. Cover and refrigerate for 2 or 3 hours. Spray Grill Topper Pan with non-stick cooking spray, place on grill and pre-heat to 350 F. Add tofu/veggies to pan and grill over medium heat until marinade begins to caramelize, stirring occasionally. Serve immediately with jasmine rice. P.S. Any leftover pineapple juice may be incorporated into a nice cocktail for the cook.

(68,576 posts)get me...one of the old types with a freezer on the top...well I practically had to climb in it to clean the back and hit my head so hard I saw stars for real...gave myself a concussion...so your husband is right. Enjoy your pizza!

(1,706 posts)(sweet and sour) on rice, broccoli with lemon and butter, and sliced tomato and cucumber. My sons did not care for the chicken and sauce, despite it being the older one's idea and creation, but my husband and I liked it Dessert was a shortbread finger for me and raspberry cheesecake gelato for my husband, along with a second glass of wine

(68,576 posts)I also had a piece of raisin bread with light butter ...canyon bake is the best gluten free bread I have tasted...and for dessert fage yogurt with blueberries sweetened with swerve...lots of water.
