What's for dinner where you are?

(11,940 posts)I make my regular mac & cheese sauce (a white sauce w/ a block of Kraft extra sharp cheese shredded and melted into it). I stir the sauce into cooked tricolored pasta, then stir in diced leftover hotdogs and a drained can of stewed tomatoes.
Broccoli will be plain, steamed.
I'll probably offer the kids some kind of fruit w/ ice cream or Oikos yogurt for dessert.

(28,791 posts)we've got sunshine and 60degrees in PDX today, so I'm gonna go play in the mud. I can at least get some compost sifted and maybe work on the hoophouse site.
maybe I'll roast it with vegies and sweet and sour...

(1,708 posts)The teen boys like it and it reheats well for my husband when he gets home later on. Carrot sticks and cherry tomatoes for a side.
Seeing the variety of what people are fixing every day is pretty cool!

(1,708 posts)Saute 1/2 a big onion and 3 cloves of garlic, both chopped, in olive oil. When the veggies are soft, add herbs: (this is tough, because I don't measure) maybe 3/4 teaspoon cumin, the same of oregano, maybe 1/2 teaspoon thyme, chili powder and some cayenne. Drain two (15 oz) cans of black beans and dump on top of the onions and simmer while the rice cooks. Serve beans over rice with chopped cilantro and a squeeze of lime or some cider vinegar over the beans.
I suppose this is a lot better with cooked-from-dried beans but I don't mind canned and they make the dish very easy and quick. If you have some bacon or ham, they're tasty in it but it's pretty good strictly vegetarian. One could certainly add more chili or cayenne, and make it spicier. I like to cook the rice separately, that way I can use leftover rice another day. Cheers!

(ed to add) Generally, I don't measure either. Spice, taste, adjust. Spice, taste, adjust. I use my nose and a taste as a measure.
Obviously, I don't bake much from scratch - that's usually pretty specific. Make a mean homemade pasta though.

(12,254 posts)mashed potatoes, and a purple leaf salad with tomato, onion, parsley, and artichoke. I made croutons from the last of a leftover baguette to serve over the salad. Now we watch "The Simpsons" and Mr. Pup heads back to the office at 7:30 for another long night of work. At least he's well fed!
