It's Cookie Time

I just finished up a batch of Chocolate Shadows.
A rich peanut butter cookie marbled with peppermint flavored chocolate. Press them down flat like a Snickerdoodle ...they are so yummy.

These are going to a church function tomorrow night. After I drop the cookies off I am heading over to our so called Congressperson's (#KremlinKay) office for the Impeachment Demonstration.

Later I am going to put together a batch of Spicy Mexican Chocolate Cookies. This is a slice and bake cookie, so they are going into the freezer until I need to bake them. Those are going to a different church function on Thursday.

I am really into slice and bake cookies these days.

Y'all should know I only bake like this when stuff is going out the door

I have 5 cakes to do before Christmas. Three chocolate pound cakes and two Italian Cream Cakes.

My SUnday School class has an auction every year and I always put "Special Occasion Cakes" in the live auction. I'll offer 6 cakes and when there are 6 bidders left, they all pay the same price. Then they call me when they need the cake and we discuss what kind etc. SO one of the chocolate and both Italian Cream cakes are from auction.

I also take a couple for the Silent Auction table and this year I made a Lemoncello Pound cake and a Bourbon cake. I'm really interested to know how the Lemoncello went.

Mexican Spicy Chocolate Cookies.
These are slice and bake. I'll finish these up in the morning. One of the few recipes I will choose Mexican vanilla over regular. I love these.

Chocolate Shadows.

I scoop these out with my little ice cream scoop and press them down like you do Snickerdoodles. I also use the maximum amount of peppermint extract.
After I add the melted chocolate, I fold it in with a spatula instead of the mixer so it gives a nice marble effect.

5. Yum! No cookies for the impeachment demonstration?

Just joking, hopefully way too many participants. We were going to join one in the nearest town and then across the square to dinner, but I'm covered with a blistery rash and know from experience with poison ivy that some will assume it's something contagious and act stupid. How could I have been around Plumbago auriculata for 40 years and never learned it does that?

I dropped off some almond cloud cookies, the King Arthur recipe, at our kids' house on the way out of Georgia for the winter because our DIL loves them; she'll allow herself a couple, and her guys will disappear the rest.

My husband surprised me by saying he wants those "white thingies" (turned out to be white chocolate-gingerbread blondies, Martha Stewart's,), so I should do those this afternoon since you reminded me.

But just realized that may be it for now. I always make a ginger spice cookie with orange zest and an almond pressed into the middle, but the family who expect them won't be down until after the new year.

And most people around here're on a diet or gone. I can always knock out some oatmeal lace cookies (the kind that use heavy cream and are extremely thin), batter quickly stirred up on the stove, if needed. Long ago we had neighbors who'd drop by and expect Scotch and some of those. That'd be nice to start again. On the patio because it's Florida.

Mom would make a batch of fruit cake batter but make cookies instead.
Heavy on pecans.
Loved 'em.

my fruit cake batter recipe has orange juice in it and lots of spices. I like it with just nuts and dried cranberries

I was actually going to mix up a batch of cranberry/orange/walnut slice and bakes but I went down the House of Representatives rabbit hole and ran out of time.

I love good fruitcake, but the two times I've tried to make it myself been very disappointed (two different recipes), and I've blocked from memory what I spent on each. Not to mention all the hopeful time waiting, brushing with liquor etc. Cookies sound good.
