Appetizer: slices of salami. Black and green olives. Apple slices: gouda with dill on them.
Roasted vegetables/lamb. Potatoes, carrots, and fennel.
Dessert: apple cranberry tart made with (prepared) flaky pastry layers. I'm putting vanilla French yogurt over mine and having it with hot Earl Grey tea.

(15,084 posts)It's layered just like a traditional lasagna, except I use thin sliced russet potatoes instead of the noodles. Also thin sliced zucchini and eggplant. It's delightful.
But, technically, it's a left over. I am singing the Mozart Requiem with my chorus tonight!

(22,035 posts)Life and work have been really hectic and I've missed participating in your Group. On top of that and unfortunately, the Landlady(!) has been half-sick with a minor chest infection, (NOT COVID-19).
Anyway, tonight I'm cooking pork ribs in the crockpot with a spicy homemade barbecue sauce. They'll take another 3+ hours to get good and tender.
I'm soaking beans to make a three-bean salad with kidney, black and red chili beans. I'll also add sliced onions, sliced green olives and quartered cherry tomatoes doused in olive oil and Balsamic vinegar.
The other side dish took some internal debate but I settled on mashed potatoes with garlic.
We stocked up on fresh fruit so that'll cover our dessert... along with a snifter of brandy!

Handful of crackers, cheese, maybe a few slices of salami, cherry tomatoes, pickles and a cold beer.
Probably not going to cook tomorrow night either. Going to Dad's for a big "Sunday Dinner."
