Easy Recipes to Cook While You're Self-Quarantined

'Here are some simple dishes that can be made mostly with what you have on hand.

Ali Slagle’s cheesy white bean tomato bake is made with pantry staples: canned beans and tomato paste.

There’s no doubt about it: It’s an uncertain and scary time, but you and your loved ones still need to eat, and the act of preparing and serving a meal — even a simple one — can bring great comfort to the cook as well as to the diner. If you have a decently stocked pantry, you can make a wonderful meal out of a few staples. And if you are able to safely get to the store or have groceries delivered to you, your choices are even greater.

My local supermarket has been out of them entirely for the past week. Not even any pasta.

They usually will have more of these supplies since it is a mainstay of their meals.

my neighborhood is about 75% Latino (and I'm less than a mile from the heart of Koreatown)and they were smarter than me and go to the shelves before I did. I'm sure it's only going to last a bit longer and I do have a few pounds of beans here, but I'd love some lentils and white beans and basmati rice.

Mashed potatoes.
Green Peas.
Sauerkraut. Be sure to rinse off the extra salt.
Ham hock. cook for a long time then remove meat and add to sauerkraut.
