Cream of Anything Soup

Thought this might come in handy, too.

Cream of Anything Soup

Use in recipes to replace one can of cream of (anything) soup

Ingredients:
1 cup cold milk
2 TBSP cornstarch
1 1/2 TBSP butter
1 tsp chicken bouillon cube
1/2 tsp salt
1/8 tsp black pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp parsley flakes

Instructions:
In a small saucepan whisk together milk and cornstarch
Add butter, bouillon, salt, pepper, onion powder, garlic powder,
and parsley
Bring to a boil, stirring frequently
Once boiling, simmer for 30 more seconds to thicken

For Condensed Cream of Mushroom Soup:
Stir in one (4 oz) can of mushroom pieces to the finished recipe

For Condensed Cream of Chicken Soup: Use recipe as is
Optional:
Stir in 1/4 cup cooked, diced chicken pieces to the finished recipe.

For Condensed Cream of Celery Soup:
Stir in 1/2 cup sautéd, chopped celery to the finished recipe.

1 Tsp of low-sodium chicken Herb Ox replaces a bouillon cube.

I'm also a believer in the "let the name tell you the main ingredient," and will swap out the milk with cream while reducing the cornstarch. That will make it a little more diabetic-friendly. If you use that, you can scale back the butter some.

I'll tinker with it and see how it turns out for me.

Everything else sounds on point, though, and it all looks a ton healthier than the stuff in the can. I always have these ingredients on hand. Even with the nuttiness of the current store wipeout.

but you should cook it a little in the butter before adding milk

Saute root vegetables until tender (onion, celery, leeks, carrots, etc.) and then hit them with an immersion blender after you add the liquid ingredients. This adds flavor while thickening your soup without processed starches and ups the fiber content.
