What's for Dinner, Tues., Mar. 24, 2020

Pork loin roast, made in the slow cooker. Roasted vegetables: carrots, parsnips, sweet potatoes.

Tossed salad with arugula and mesclun. Carrots, sliced turnip (mandoline), red pepper, and heirloom tomato. I chopped the heirloom separately and marinated it in garlic, olive oil, and basil. S & P, of course.

The RG makes fresh bread every day! So fresh bread tonight, too.

Dessert: a dark sea salt chocolate square for me and a Walker's shortbread for the RG.

Fresh pot of hot ginger tea.

2. Cheeseburger.

I meant to grab a pork chop out of the freezer this morning, and when I got home this afternoon saw I grabbed a hamburger instead. So I got out a bun from the freezer and I'll make a cheeseburger. And cut up a potato to make some oven fries.

3. Chicken salad and leftovers

It’s a casual grazing day here. Got a rotisserie chicken at the store today and made chicken salad out of half of it. That, with some homemade bread, deviled eggs, and sliced tomato was my early dinner. There’s also sausage & kale soup and cioppino in the fridge we need to finish up.

We have the makings for chocolate chip cookies so might bake some later... if my lazy butt can heave itself off the couch for that long, lol! If not, there’s raspberry sherbet in the freezer for dessert.

SLOW cooked roast beef, LOTS of butter/garlic/shallots/savory spices/etc., plus onions, red skins, carrots/ and then lots of other leftover vegetables. And as a total indulgent cheat???? A can of Campbell’s Cream of Bacon Soup and a can of their Beef Consommé. Threw in the last of a carton of Ricotta cheese for some extra creaminess. It’s more like a thick, rich, creamy stew. We’ll eat it from a bowl with croutons.

doctored-up "supreme" pizza--I added mushrooms, onions, garlic and extra cheese

Dad & Sis got chicken parmesan w/ spaghetti and a side of steamed veggies.

It's Tuesday after all. I made a loaf of bread and we had some leftover asparagus. Nobody complained.
