My Homemade Minestrone.

This is mostly what I've been eating lately. I'm as addicted to this as when I first discovered authentic Vegetable fried rice in a restaurant. Yum, yum, yum, yum.

You put a teaspoon of olive oil and minced garlic in a pot. Then uh, it gets hot. Then you put in the chopped up celery, carrot and potatoes in. Stir it up. Add a can of Tomato Paste. After you stir it again, add one cup of vegetable broth at that point, to keep things from burning and sticking to the bottom of the pan. And then, add 3 cups of water, a teaspoon of salt, kidney beans, pinto beans and spinach (Put the beans in a collander and rinse before putting them in.) And then add a teaspoon of Basil and one and a half teaspoon of oregano. Cook it for half an hour, and then add elbow macaroni and add a cup of water and vegetable broth, mixed. Then let it cook for 10 minutes and it's done! :
