What's for Dinner, Mon., Nov. 16, 2020

Posting early due to working late.

Meatballs and spaghetti, using bison.

Pear, pomegranate and lettuce salad.

Dessert might be my slowcooker coconut cake if it's ready. If not, just fruit and tea.

I'm going to slice it on the meat slicer and make hot beef and mushroom sandwiches. Mustard green and pea shoot salad on the side with a miso dressing. A nice glass of port for dessert but only for me...not for the kiddo.

Al's pick. I don't care for fish sticks, but he LOVES them.

sliced tomatoes

Ice cream for dessert. It's "espresso coffee cake" flavor by a regional (I think regional) brand--Brigham's. We have come to the conclusion, that it's the best value around when it comes to premium ice cream. (Don't get me wrong, Ben & Jerry's is wonderful, but it's insanely expensive.)

I love that word. Spatchcock.

I also baked potatoes next to the chicken and cooked up frozen green beans.
