What's for Dinner, Wed., Nov. 18, 2020

Lamb T-bones cooked in the cast iron skillet. I saw the "rub" for them and do they ever look like they'll be tasty--and peppery.

Tossed green salad.

Mashed potatoes with parsley.

Apple tart and tea for dessert.

Pan-fried catfish with a spiced flour coating. Lemon, Louisiana hot sauce and tartar sauce on the side.

Steamed broccoli.

Home fries.

I picked up a local brew called F**K THE VIRUS.

Klondike bars for dessert.

She inherited a couple of cast iron frying pans from her grandfather, large and small, and she has mastered their use. She has figured out how to fry foods but keep them from being greasy and soggy.

Dinner was delicious and the Klondike bars turned out to have Heath bars in the center. The ale was unique but overly rich and I don't need to try it again. Loved the name, though!

can be but I am forcing myself to cook healthy meals...Hubs is at his new job and I will join him after Christmas.

for the first time in about 10 years. Expecting lockdown.

I think it's pork burger, kale, green and yellow squash. Life has become just a hash of its former self.

It's the poor man's version made with canned clams and bottled clam juice with some potatoes. I thicken it with a roux made from bacon fat, adding half and half to get the right consistency. Then add some bacon crumbles on top of each bowl.

It's a fast and easy way to serve a creamy, hot and hearty, one-pot meal in about 15 - 20 minutes, and soup is the best comfort food.

carryout bacon double cheeseburger with fries from the local diner. Trying to support the local restaurants as they had to close indoor dinning on Tuesday of this week.

Pan-fried in ghee in a cast-iron skillet, then roasted to perfection.

Broccoli with Potatoes, Asparagus with Parmesan, Delicato Squash.

I'm not a big meat eater. This is the first steak I've eaten in maybe five years. I choose to portion my meat about the same as the side dishes so that it isn't the "star" of the plate.

Some corn I picked up at Sams...very tasty for out of season corn and yellow squash last I had from the garden. I had rice pudding I made yesterday out of left over rice...pretty good. Hubs is at his new job and I am closing up the Cleveland House....will miss it but miss hubs more. I have leftovers for the rest of the week...since there is only me.
