What's for Dinner, Tues., Dec. 1, 2020

Pork loin roast with carrots, onions, and potatoes.

Corn pancakes. Sour cream and chopped chives to go over the top.

Vegetable souffle.

Corn with cilantro.

Arugula salad (picked from garden this afternoon) with apricots, couscous, and goat cheese. Toasted almonds over the top. Dressing has honey, balsamic, and olive oil in it.

Dessert: butter cookies with apricot D'Arbo. Wild orange Tazo tea.

5. Turkey soup

Turkey soup from homemade stock, carrots, onions, celery and brown rice
Homemade bread with butter
It is the first I've made in over a decade and these old hands are complaining about the kneading

For dessert I'm having a no sugar added Klondike Bar. They haven't been available at the Kroger for pickup orders. I happened to notice the little store had them when I picked up meat this morning.

baked potato, romaine/spinach/tomato salad w/french dressing, bosc pear halves, homemade pecan pie bars. We each ate half of our filets and will have the other half for lunch tomorrow. The pecan bars are a new recipe and DELICIOUS. I will certainly make those again. G'nite all.

7. Short ribs

Sides were pretty simple—just mashed potatoes and peas. The ribs were soooo tender. I’m not sure why, but meat cooked in a Dutch oven in a slow oven comes out far more tender than meat cooked in a slow cooker.

Slow baked in the oven for ribs or a roast beats the crock pot. No Dutch oven, but a roasting pan with a lid. A rack in the pan and some liquid below. I open it up and raise the temperature to brown to finish if that's what I want.

Homemade cream of mushroom soup.

Romaine lettuce with cucumbers, carrots, cherry tomatoes, sliced red onion, green olives and croutons. French dressing.

French bread and olive oil.

Chocolates for dessert.

Thank goodness I made it before we went out for second shop, otherwise we would have come home hungry and not had dinner. (Al wasn't ready to leave the house until nearly 5:00 pm )

The quiche had ham, bacon, broccoli, onion, red bell pepper and cheese. Quite tasty.

We just came home w/ a boat-load of ice cream. That's dessert.
