What's for Dinner, Sat., Dec. 12, 2020

Veal roast with carrots, potatoes, and fennel.



Salad: roasted acorn squash, honey-flavored goat cheese, and toasted sunflower seeds over red and green baby romaine. I marinated the squash in pomegranate juice, agave, and a little olive oil. Then I roasted it. Very flavorful. Red wine vinaigrette for the dressing.

I made miniature pumpkin loaves with oat bran flour this morning, so that went well with the salad. Pumpkin seeds on top.



Dessert: Chocolate and red wine for the RG, chocolate and cookies for me with wild orange tea.

A coworker made a big pot for all of us at work and it was delicious. I’m taking a serving home for later tonight. Beef short ribs, potatoes, corn on the cob, veggies, nice broth.

Since TJ will head out to work tonight, I'm pondering the options for me.

I will have leftover salad for sure.

Perusing the refrigerator for leftovers, I find a baked pork chop and stewed apples.

I think FLFC and I will be good with that.

Fruit and cheeses later maybe.

I have some chicken parts that have been marinating all day in lemon juice, olive oil, rosemary and garlic. I'm going to bake them on a rack in the oven.

mashed potatoes and gravy
steamed green beans
dressed cherry tomatoes

I have no dessert plans. There's some ice cream...

It's a damp, cold and gray day in the Catskills and the Landlady(!) decided she wanted to cook all day. Along with the fireplace, her oven has heated up the house with delicious smells. This is one of my favorite dishes!

Beef Bourguignon with mashed potatoes and steamed asparagus topped with minced red pepper.

Beaujolais.

Fresh fruits.

Yum!

I added a couple of spoonfuls of maple syrup to my baked sweet potatoes with butter and salt as usual.

At first, I was looking to book a reservation at Cher’s place. Then I saw what PJMcK had on the menu, and I was stuck. Then I saw what MissMillie was serving and realized that my finances wouldn’t allow me to travel that far by plane this evening. Sigh.



I got a small bowl of beef stew, frozen chicken patty sandwich, some black olives, and some fuji apple slices. I’ll live.
