They got that name because the area around is all pretty flat and the university is built on a fairly steep (for western KY) hill. Not very imaginative if you ask me. I think they were known as "the pedagogues" before so I guess anything would have been an improvement.

They didn't have a mascot for a long time but they were known for bringing red towels to all the games. The mascot came later (I'm thinking the early 80's maybe) - he is called Big Red and was intentionally created to be an ambiguous but loveable furry blob. They just wanted something (besides a towel) to rally around (and of course to sell merchandise).
