I had been thinking about what I would cook on election night, as I settle in to enjoy the results on television. When I was a kid, my mother would always make a big pot of Brunswick stew, so I was thinking of doing that for nostalgia's sake, but I've never really liked it thanks to the lima beans. Now I think that a good risotto will be just the thing. I found this link to 8 tasty options. Does anyone else have a favorite?

(12,904 posts)My favorite is with roasted artichoke hearts, but I would eat any risotto.
My election night dinner will feature tacos this year. Pork carnitas with pickled onion, coleslaw, and pico de gallo.

I sometimes add a little butternut squash to that, too, a finish with a heavy dose of fresh Parmesan and crumbled Pancetta (or regular bacon is just as good). White wine, chicken stock, arborio rice, and a little saffron. Paired with a crusty bread and a dry white. And Mr Podesta is absolutely right about the slow add of small amounts of the liquid. Makes all the difference!
