For example, ales are brewed with Saccharomyces cervisiae, lagers with Saccharmyces uvarum.

No one is "poo poo"-ing lagers. I'm just saying that ales are generally more robust in flavor while lagers are generally more refreshing. That's why ales are generally served not-as-cold as lagers.
But I think that will be all for me; you seem to be losing your cool a little.
