Under existing agreements, Sweden couldn't re-extradite him without the permission of the state that sent him to Sweden, namely, the UK. So, under those circumstances, Assange would be able to contest extradition to the US in Swedish and UK courts: in other words, extraditing him to the US from Sweden would be at least twice as hard, legally, as extraditing him from the UK to the US
With such protections in place, there is no reason for Sweden to guarantee anything to anybody
A promise, "We will not re-extradite you" is a free pass for any unknown crimes the person committed and possibly even a carte blanche for any future crimes the person might commit
