25%+. I have done the waiting tables and bar-tending thing. However, on a few occaisions I have received such horrendous service where there is no "obvious" reason (e.g. there is not a crowd, or the floor is not under-staffed) and the service was frustrating (ie there is a difference between inadequate service and really awful service) that the idea of giving a full tip is hard to fathom. This is extremely rare - and I can't remember "stiffing" - but I have given a low tip (10%) in such cases. Having done the work, I do not believe that a decent or big tip is entitled in the face of extremely poor service. Per your question - I still got paid for bad days - but if it had an effect on my service than I would expect a lower rate of tips. And in other jobs I have held if I consistently did not perform - I wouldn't expect to have a job - but earn less - I would expect not to have a job at all.
