They have found that the demographics and opinions of voters w/o land lines are similar to those with land lines, so they just assign greater weight to the responses of those in demographically similar groups (many of whom, as you note, are young). To check the accuracy of the weighting, they do, on occasion, do a poll in which cell users are included (there are different means for doing this).
