Bought a couple bunches of bananas at Costco in order to make dehydrated banana chips.
They were green when I bought them, so I figured I'd have a few days leeway...and of course, time got away from me. They were awfully spotty by the time I was able to get to them; almost at the 'perfect for bread' stage.

I sliced them about 3/8", dunked them quickly in a lemon juice and water solution (to keep them from going all brown and icky) and dehydrated them. After two days, they still aren't CRISP.
They're chewy, and banana-y...should I just give these to the critters, or can they be safely stored in the fridge and used as human munchies?

I'm worried about them getting moldy is the thing...
