Quick lunch recipes, especially for taking to work? |

I'm transitioning my husband to vegetarian (then vegan) ... and as you all know, it isn't easy to get meals on the go. What do you guys pack for lunch if you take your lunch with you to work?

I usually have hummus, guac, babaganoush or some other kind of veggie spread with ww pita. Even cold refrieds with some baked corn tortillas (Bake em to get em crunchy) are nice.
When all else fails there's always the nut spread options. This is less boring if you switch it up. I send it on WW waffles or on raisin bread. Applesauce, Raisin and Peanut butter is usually a hit on wheat bread. Also different nut butters are a great alternative. Sunbutter is of the devil and I can't keep it in my house (So good). Trader Joes carries some flavored nuts that you can grind for quick homemade flavored nut butters. I like the spicy almond and cinnamon almond ones. The spicy almonds ground into butter is great on sandwiches with cucumbers.
Simple grain salads are also easy to send especially the vegan ones. Google for a Basil Quinoa lemon salad or a Beet Tabouleh. Yummers. I make extra for dinner so it's good for lunch the next day.
Also don't forget soups. Send him with a thermos.... It's starting to get chilly.....

and some carrots, celery, and hummus for munching on. This week I bought some pita bread which I am going to wrap around artichoke hearts and cream cheese like a little sandwich.

one of my faves.
Also a veggie burger is really easy to nuke.. one minute in the microwave and put it on a bun with whatever toppings you like and something crunchy.
Pasta is easy to reheat so I always make more than I know we will eat.
I like salads too, if your husband likes to eat them, you can keep the dressing separate in a little container and its easy to mix fresh.
Amy's makes some really good frozen veggie meals.
Starbucks makes a good 'protein pack' with a mini-scone-ish thing, almond butter, fruit, cheese and an egg (definitely not vegan, but great for a vegetarian) on lazy days.
