Mushroom rice pilaf

Mushroom rice pilaf
cooking right now on the stove!

sauteed 1/2 onion chopped as fine as possible in ~2 tbs butter till translucent.
added 3/4 cup uncooked fine egg noodles broken up. Stir to toast and coat w/ the butter.
added 2 cups white basmati rice, stirred to toast and coat with the butter. (added another dab of butter cuz it seemed to want it)
added 1.5 cups finely chopped mushrooms, stirred in to distribute evenly.
added 3.3 cups water and ~1/2 tsp kosher salt.

brought to boil, reduced heat to low simmer for 20 minutes covered let rest 5 minutes covered.

smells really good cooking!

Tastes really good! will have this with some stir fried squash from the weekly csa delivery.
