We finally get to see my turning 93 year old mother-in-law for her birthday on March 15! Rescheduled from last year!

I have a great carrot cake recipe that I love to make with our wintered-over carrots. They are uncommonly sweet. We have a good crop, and I want to make her my delicious carrot cake! But she can't eat eggs anymore, including in baked goods. It takes 4.

Thought I'd check with hive mind here - I'll bet there are some excellent ideas!
